Not sure if they are too unsung, but the guys who developed the internet are top of my list. Basically the ability to communicate science easily has been the key driving force behind a huge about of scientific discovery.
I’d say it’s all the people who don’t do the really exciting experiments that revolutionise how we think about the world, but instead do all the boring stuff like measuring the properties of chemicals, and tabulating the size of atoms! Their work isn’t earth-shattering in itself, but without it none of science could be done.
